Delicious Chicken Noodle Soup

Preparation: 10 minutes Cooking: 24 minutes Quantity: 8 servings Ingredients: 1 tbsp. olive oil 1 cup diced carrots

1 cup celery, finely diced 1 chopped white onion 2 skinless chicken breasts, cut into cubes 6 cups of chicken broth 1 bay leaf 2 sprigs of fresh thyme 3/4 cup soup noodles Salt and pepper to taste Preparation: 1. In a saucepan, heat the oil over medium heat. Cook the carrots, celery and onion for 2 minutes. 2. Add the chicken cubes and brown them for 2 minutes. 3. Add broth and bay leaf. Bring to a boil, then simmer for 15 minutes. 4. Add thyme and noodles. Continue cooking for 5 minutes, until the pasta is al dente and the inside of the chicken meat has lost its pink color. Salt and pepper. 5. When serving or canning, remove the sprigs of thyme.

Optional canning: preheat the jars before pouring the hot soup into them. Refer to FAQs for more information.
